We order from our farm shop so get a nice rack of ribs with meat still left on them. Can never see why people buy from the supermarket and pay more for a set of bones (per kilo) than the meat cut off them. Should have around 1cm meat on the outer curve - no shiners.
Then put a rub on for 12 hours, then a nice slow cook in the barbie with apple wood smoke (120C) for many hours, use a mop then a nice sauce. Wrap in foil for part of the time if needed.
Very similar for beef, want a nice meaty rack. At the market often get Jacob's ladder with is what is behind the back rib. Back rib is also a nice cut, more meat and still a slow, long, smoke.
