So preview you emails in plain text and you can see the links and you don't fetch all the garbage from some web site that can then log your email address as valid.
Good mail senders have a plain text equivalent to HTML (or similar) so you still get readable content, the less good don't get read very often.

Most email services and clients also block images and links by default anyway.

What on earth would anybody gain from hacking your VM account ? They can't exactly withdraw loads of money, unless you're stupid enough to use the same passwords for online banking.

Pretty much everything uses your email address for password recovery these days so gaining access to somebody's account and then email will allow them access to their Paypal account, Amazon account, pretty much every other online shopping account, not to mention identity and address details.
