Some, or all?
Didn't have to get all new apps when the iPad 2 and iPhone 4S went dual-core with the "Apple A5", or when the iPad 3 gained a quad-core GPU with the "Apple A5X".
Some apps did get updated (for free) to take proper advantage of the improved CPU and/or GPU, but there was no general "everything needs to be updated". I don't know how much of it is handled by iOS itself being updated to handled the increased core count.

According to apple all the old apps will run on the new iPhone 5 but they can be adjusted to take into account the extra height and better A6 chip which is said to be 2x faster in most applications. All this and more can be seen via ITunes, Podcast, Apple Keynotes/Apple Special Events/September 2012.m4v
Its looking good but I think I will wait until they bring the next faster one out. I am a little concerned in the thickness of the new iPhone. Will it break, I have had the sceen go on my 4s which cost £139.00 to replace

That's what i picked up on ,more is not always better and haven't i phones had issues in the past with power usage and heat buildup ?.One of the things i was curious about was how do they keep modern smartphones cool with multiple cores

Nope. For one thing, apps optimised for 1 or 2 cores won't suddenly stop working. They just won't use the extra cores.
For another thing, Apple are surprisingly good at persuading app developers to use new features in their devices. They also don't allow developers to charge for updates. They can, however, stop development on the old app and release a new one (as ALK did with Copilot Live).

Not an Apple design based on the "off the shelf" ARM Cortex-A9 or A15, but a brand-new ARM-based chip designed by Apple, using the ARMv7s architecture. Similar to the A15, but custom designed by Apple.

As iOS uses Grand Central Dispatch, as long as the app is written correctly the OS should automatically use however many cores each device has.
