Which update? iOS5? Yes, it's working. I installed it over a week ago, as did many others.

You normally update first using iTunes when Jailbreaking, unless the phone is already up to date.

That's where I was reading, and it was this part that sounds a bit wrong.
it makes it sound like that's the IOS5 that you'll be putting on and that's where to get it.
You’ll need:- A supported device running iOS 5, which you can download for your iOS device from here.
do Apple actually do a seperate download so you don't have to download through itunes anyway?

Yeah, you can download directly from Apple. The links there are all Apple.
The device itself needs iOS5 installed before Jailbreaking, plus you also need a copy of the firmware anyway for the actual Jailbreak.

So can I do the itunes 'shift + restore' thing first to install that IOS5 on the phone, and then run the process with sn0wbreeze after?

Yup. Install iOS5 first, then do whatever sn0wbreeze says to Jailbreak it.

No.
Bluetooth on the iPhone is restricted to things such as headsets and keyboards only - no file transfer.
