Re: ubuntu single user mode with networking
Gnome as that's what comes with Ubuntu. I could install the Kubuntu upgrade but I'm guessing that'll be a drama in itself.
And I was thinking it'd be easy to get my head around it once I had time to play.

Not really I think KDE is more suited for the newb.... ps dont forget to uncomment some of the sources from /etc/apt/sources.list : fire you adept or synaptic do a refresh and presto 19-20,000 packages wil become available to you search in there for gnome or kde and you'll find a lot of helper apps to help you configure and customize your install.
Give the live cd a whirl if you dont like go back to gnome for me personally I didnt like gnome.

Re: ubuntu single user mode with networking
You won't need to install Kubuntu, you can just install the KDE software on top of your current Ubuntu installation.
There'll be a HowTo over at the ubuntuforums website.
Also, as I just dropped in to Gnome to check this, you have a Shared Drives tool available in Gnome... just click Computer -> Control Center -> Shared Folders
Right, time to go back to KDE
