That was more the Saga creater taking things way too far and just doing what he wanted because he could. The fan made despecialized editions are digital restored but leave out nearly all the added and changed scenes.

But getting old films remastered from the original 35mm film can make for a beautiful and stunning looking version. The original Blade Runner Blu Ray was one of the first older films that got a proper scan and remaster and at the time were seen as the best Blu Rays to show off how good a film could look. The colours and details all the way they were meant to be seen.
