Cat5e Keystone Jack
Hi
After a bit of advice please, i used to just have a network cable that ran outside from my HH downstairs to a switch upstairs, at each end was just a normal RJ45. With it connected like this i used to get speeds across my network of around 80MB/sec
Now i have decided to remove the RJ45 and put some neat network faceplates on, but the the line now connects at Fast ethernet instead of Gigabit ethernet.
Any reason this would be?

Bad cables or improper wiring would be the most likely culprit.

yeah, i have checked the cables and they are wired as per the instructions on the keystones, and as before it connected at 1G/bit so i know the cable is fine!

Just because it was working before doesn't mean it's fine. It could well have been borderline and adding an additional four connectors to it pushed it over the edge.
I'd run a basic cable/continuity test first, if you don't have one of those testers already they're less than £10 on Ebay.

Ok you have confused me
How am I adding another 4 connections? Doesn't gigabit use all 8 wires when it is connected to a rj45?

Make sure that you get the weird order of the 4 middle conductors correct otherwise you'll not have 4 twisted pair sets, only two which would cripple your speed.

This. It's quite possible that you haven't punched down one or more of the pair members enough to break the insulation. Continuity check will tell you all you need to know.
