I cooked up Chicken Osso-buco style.
Brown chicken thighs (bone in, skinned) - season with salt/pepper.
Put chopped onion,carrot,celery (we use more onion instead of celery) and soften up (soffrito) about 10 mins.
Add tin tomatoes and herbs stir and add chick back to pan, cover and simmer till cooked.
Chop up parsley and lemon zest (and garlic if want) and sprinkle over top.
We served with polenta.

Peppered smoked mackerel fillets briefly heated in the microwave with tartare sauce. Mixed salad with some garlic mayo.

Yeah, making the broth is time consuming. I did it for about 10 and had to borrow big catering pots from church. Also expensive, used marrow bones, beef shin (whatever was cheap on the counter).
Posh places put fillet steak in the bowl but very thin cut silverside is more authentic and much cheaper.
Whenever I make pho I put too much noodle and veg and too little broth.
