Just made a One-Pan Orzo with Spinach & Feta (also has spring onions, garlic, coriander, lemon zest, and peas).

Pan fried mackerel (from Ms NTL), beetroot & fresh horseradish salad. Air fry'd new potatoes and asparagus from the wife's allotment.

Bank holiday Monday I cooked up some curries for guests:
Karachi chicken - reheated from Saturday (planned)
Beef rendang - reheated from earlier (not planned) - dry curry but I used a penang spice mix
Corn on the cob with spicy onion "gravy"
Paneer, mushroom and paneer curry
Pineapple and coconut curry - cooked Sunday and served at room temperature - probably the favourite of the five.
