Until I get a job I doubt I'll be going anywhere.
I might be going to Poland in November to visit Auschwitz.

Going to the Dominican Republic for the last 2 weeks of March, and this weekend just gone we've booked to go to Thailand for the last 2 weeks of March next year.

I'm sure Poland (in general) is a nice place to visit, but thats not what his post says.
Its very specific "going to Poland in November to visit Auschwitz."
You may consider visiting a concentration camp a "a holiday", I do not, nor I suspect would the majority.

We are hoping to go to Cyprus in September depending on money left after building work. We would aim to go to the NW corner, Polis/Latchi and avoid the Brit heavy areas like Polis, Larnaca, Limassol and the like. Maybe some time in the Troodos.

I would recommend North Cyprus (TRNC) - you can fly to Larnaca, then get a taxi to the North.
Lots of rentals/hotels around Kyrenia.
