There was a rumour out there that nVidias GT300 cores were only yielding 2% per wafer of actual stable cores.

No your ok Thomas not a gadget freak just an old fashioned freak . I have already promised my son my 4870X2 otherwise would have seen if i could do have done you a deal . I don't think your going to struggle to get a decent card for a good price though give it a month and ithink there will be plenty.

Are these that much better than NVIDIA's offerings and the previous generation, both drivers and hardware?

All we have right now are leaked benchmarks nothing official but at the minute the single gpu 5870 is comparable to the dual gpu nvidia 295. Have to remember that the 5870 is being benched on early drivers and will get a little better with mature drivers. But short answer is yes they are better then most nvidia cards with only the 295 having an advantage in some but not all games.

i just cant wait to see what nvidia bring to the table when they release a new card, as it will have to be very good to keep customers looking at these cards.

Depends what they have in development. You never know where the initiative will be as it switches. Look at the AMD dominance in the cpu market lost to the C2D same thing happens in the GPU market.
I think with how games ar ebeing written (or not) the most important thing for me would be effective driver support rather than terraflops or pixel shaders etc

The drivers aren't immature. Aside from the configuration of the shader clusters, it's pretty much the same architecture, only everything is doubled.
The drivers for the 5xxx series should be as stable as the 4xxx series.
