When you process maize into glucose syrup the maize kernels have to be soaked in water, first, so you can later remove the 'husk', separate the germ & then further separate the starch & protein in what is left.

That smell was the water the grain was soaked in, being evaporated & combined with the husk to make animal feed

aha - not sure I could have lived with a smell like that every day though...
