We believe you Raistlin
The short version of the answer is not a lot lol. Just a few things like policy settings adjustments etc.

Re: XP Pro and XP Home
I posted what I did, then realised I couldn't remember the links.
Then I went looking for the links, then my connection froze and wouldn't do anything.
I closed everything down, got back here, then found that I'd been beaten to it
Oh, and apparently, one of the differences is that you can't add group permissions etc:

So did I but apparently you're considered too stupid to have that sort of level of control unless you've been out and (stupidly) parted with (an enormous amount of) your hard earned cash for XP Pro.,

Re: XP Pro and XP Home
TBH, i've been looking on Ebay for a copy and it appears that a "genuine" XP Pro is around £20 more. E.g.
XP Home
XP Pro
EDIT - Scratch that the Pro version is an "Upgrade" disk.

Re: XP Pro and XP Home
Biggest difference is how XP home does not, but XP Pro does work with windows active domains and servers. Home just will not talk properly to our office server, but Pro will.

Re: XP Pro and XP Home
I found that I had to go looking for extra bits and pieces of software for xp home when I was setting up my home network. The xp pro machine had them already installed.
