Theoretically, yes. In practice, it's unlikely. As stated above, it's likely that the P2P system uses some sort of hashing system to ensure that it is actually fetching parts of the right file, but most of Microsoft's updates are digitally signed, and any attempt to change them would cause Windows to reject them.
