Sky will go over everything with you but you will have to call Virgin to cancel your services.
Best option is to call Virgin first to see if you are in contract as Hugh suggested and give 30 days notice if you are. VM will try and offer you all sorts of deals to stay and going by this forum and my own experience, will give you wrong advice about Sky/other suppliers.
Once you have given your 30 days notice, contact Sky who will help you do the rest. If the install date is after your VM cut off date, you can always call virgin and ask them to extend the date another week or whatever, so that you are not left without any services.

You might find that your install date is before your virgin cut off date. They only let you book 2/3 weeks in advance and you have to give virgin 4 weeks notice.
You can change install date and put it back tho

Always good to have a week or so buffer to ensure its all working. I would personally take a hit and ensure the sky is booked before the VM notice is given even if it costs .

I would take a slight hit..book new service, and then cancel old

M8, I left Virgin a while ago & never looked back. I have BB unlimited & get 16 meg, constant. Phone with all calls & sky entertainment pack. I paid 36.50 a month till a week ago, I phoned them & they renewed my package for 5 quid less, 31.50. I get no bull when I phone, & have not had any problems. I also overlapped the contract by a week.

If you want to keep your telephone number remember not to cancel the telephone with Virgin, Sky will port the number which will cancel it on the switchover date.
