It's less about "need" and more about "if I can have it take 1/3rd as long to download red dead redemption 2, why wouldn't I?"

As to cost of multigig ports, sfp+ ports are very cheap to add, and while most probably wouldn't ever use them, they give the option of whatever optics (or indeed rj45) option you need. The average customer would probably ignore such ports but for those that want them the option would then be there. Cheap DAC cables are a thing, and mmf optics are less than £10 each.

I can see why they wouldn't want to put a 2.5g/5g/10g rj45 port on, not only are they expensive for something most wouldn't use, but it then brings "why doesn't my ancient cat5e link work at 10g" support calls.
