Sky fibre uses a different technology (VDSL2) which by default has lower latency than virgin's DOCSIS network. Not much you can do if you're already using the SH directly and have no other switches or gateways to remove.

Out of curiosity what do you get to say 1.1.1.1 or 8.8.8.8?
