Brought Stranded Deep on its release day, initially I thought it was great but as you say it lacks longevity & I fire it up once a month or so when there's been an update just to see how its progressing.
Multiplayer would be really good, that would make the game IMO.

The forest is another early/alpha release which showed great promise.
One to look at is from Hinterland studio's called The Long dark.
