You either want a proxy server/firewall (Eg isa) that everything goes through. You might be able to use netmonitor with a card in promiscuous mode - But thats not going to give you any nice charts!
Otherwise you are going with what Halcyon said and get a 3rd party product to install on each machine (I prefer the proxy way - No interfearence then
