The indicator on your TV works by detecting a NICAM digital transmission. NICAM is the method used to transmit stereo audio over terrestrial TV (your aerial).

Telewest, NTL, Freeview and Sky all use another method (still digital) to transmit stereo, which is decoded by your Set Top Box, and sent to your TV as a standard as two standard analogue audio signals (one for left, one for right).

Therefore, the TV will not show that it is recieving a stereo signal, but it will recieve stereo sound.

Regarding connections. All you need is one scart cable going from the TV output of the Set Top Box to any available scart socket on the TV. Then pick one of the music channels, as they are more likely to be broadcasting a stereo programme.
