Well then chaps... I sucked it up and ordered the following:
Linksys WRT54GS-UK 125 Mbps Wireless-G Broadband Router with SpeedBooster

I plumped for the 125 Mbps version - but do any of you reckon that will make a shade of difference? After all, my Broadband connection is only 1 Mbps.......

What's the point of such a high speed? Any one know??

Tons of people on CF are raving about the Linksys... so I hope it does the trick!!

I just hope it works with my xBox 360!!! My Voyager 1500 *should* do!!! BT even say so, and is the one they recommend for wireless xBox Live!

If you've already got BT Broadband then all you need is a modem/router with a spare Ethernet port (or a wireless router if using the Xbox Wireless Networking Adapter).
If you ordered BT Broadband recently then you may already have this (e.g. the Voyager 205).
If you do not have a compatible router, then you can order one of the following from the BT Shop:
  • BT Voyager 240 ADSL Router (with 4 ethernet ports)
  • BT Voyager 1500 Wireless Router (with 4 ethernet ports and wireless networking)
So to summarise everything I've tried:

There's nothing wrong with the STB because I can connect the 360 directly to it without any grief at all, all the settings on the router's config page look fine, I've tried putting the 360's MAC in the DMZ, I've fixed an IP for the 360 and put the IP in the DMZ, I've taken off all MAC address Control, disabled all Security functionality, checked the Wires, Checked Firmware (and even 'updated' it to the same version just to be sure)....

There just doesn't seem to be a solution! So for anyone who has the same problem and stumbles across this thread... I'm sorry I've let you down... but I've gone for the *hopefully* easy (and expensive!) option of buying a whole new router!!!!!!

I'll let you know if it works out ok when it (hopefully) turns up at the end of the week!!
