The quiz master should ensure that his questions are worded in such a way that the only possible answer is the answer he has got on his sheet.

I would point out that I very much *do* attempt to ensure this!
Especially if I'm putting in "booby trap" questions I look carefully at the wording to make certain that the "trap" goes off properly (eg the "how many *fighting* men did a Roman Centurion command" question)
The fact that I was willing to check and award a bonus point because someone picked up something I missed shows that I'm not going to be bloody minded and insist on *only* what I've got "on the sheet" as the right answer.

There have been many instances of quiz shows on TV where a contestant has been brought back because they gave a different answer to the one on the quiz masters sheet but it was later found that their answer was also correct.

I'd be interested to see where you get this "many" from.
Even if I were inclined to change the result on that question, it's not going to make a difference to the final result and, as I said, gazzae did get in first which is why I gave him the bonus.
There was, of course, the situation on University Challenge where one of the team members took Jeremy Paxton to task on a Picture Round because the picture was the Oak Leaf emblem of the National Trust but he had asked "What is it?" to which she replied "It's an oak leaf" which was correct according to what he'd asked, but not in the context of the question.
