In Unix this would be so easy, you'd just output the ps command to a text file... although you'd be best scripting this to refresh every few seconds or so. Fortunately, a version of the ps command is available for Windows here

Oh, and you can pipe this output by typing pslist > ps.txt (or whatever you want to call it)
