Yes, the Sky Q boxes will continue to work even without the satellite channels, but there must be the possibility that Sky will just disable the boxes completely when the satellite channels close down. Sky won’t make any money out of you if you just watch the streaming services.
I’m not saying they will do that, but I wouldn’t put it past them, would you?
