This is the basis of a common argument I have with a lot of people in IT.

By making the choice to use Windows you are choosing to abide my M$s EULA and M$ because they license and not sell the software has the right to implement any clause they see fit. For example Recall AI and Logging in with a M$ account

Now most of these implementations can be circumvented , even in the new preview installs you can run a script that still allows local log in for now. Recall can be removed and AI has settings so far that can be turned off . And I am sure the same methods to remove aspects of a windows install will still be available for AI also .

I do totally agree with you but also accept by choosing Windows I also have to accept that includes Microsoft and what they want

Yeah but the feature changes are available and all of them are tested in the preview channels. I follow Chris Titus on Youtube he is pretty much all over these changes and has tutorials on how to build your own Windows ISO removing all the features you do not want. Personally the only issue I have is Recall and it is not actually activated on none Co Pilot PCs yet but it can be removed building your own ISO
