No they won't switch, your contract will just keep running, it's upto you to transfer your number to another provider and at that point the contract with EE will automatically end and they will stop taking payment. If you want to stay with EE but move to a pay monthly then you have to contact them, just like any other provider.

Personally if you want to save money I'd move to 1pmobile it will be cheaper and runs on the EE network so you would do that after your contract ends by requesting a PAC code and giving it to 1pmobile.
