Florida has 22 million people, they completed on the night.
Nevada has 3 million as is still doing it.
I know some states can't count before election day whereas Nevada can but that's still a joke.

It is not though that Florida was won so significantly that nobody really cares about a few thousand partially completed postal ballots, provisional ballots and absentee ballots.
They will still have officials wading through these things before finalising their results in a few weeks time. However nobody is rushing them, and nobody has a great interest in standing over them while they check these things as it won't affect the outcome.
I do agree though that the process needs to be ironed out and made consistent across the 50 states and DC.
