I believe it's "random" as it's based off the MAC which is different if you use your Edgerouter as the gateway or the SH3.

I've noticed the same thing but the other way round, with the SH3 in router mode my latency is higher and i get more hops to say 1.1.1.1, but in modem mode with my pfsense i shave off ~5ms / 3 hops to 1.1.1.1.

I think its probably just "luck" as to which IP you get and which route it takes
