Have you also installed the Plex server? The Plex app (client) is no good on its own.
I set it up yesterday, with the Plex server installed on my Mac and the app installed on my Xbox One (and other things).
Watched a few episodes of something I've got stored on my Mac. Worked quite well - better than the native Media Player
