For the DVDs I own, I bought Mac DVDRipper Pro and then used Handbrake to create a m4v using the H.264 codec with the High Profile settings.

I have a (4 core) Mac Pro 1,1 running Yosemite and on this, it takes ~ 1 hr per DVD

I am not clear on the Video formats that iTunes will accept so you may have to play about with the Handbrake settings
