Qasi has partially answered this as regards the same RF frequencies. The key to higher speed is the number of available channels load balanced to the users. This doesn't rise with a switch from coax to cable. Indeed, unless fibre technology has moved on since I last looked some time ago, a single fibre is constrained to 96 colours (frequencies) whereas coax is not.

The channel number constraint on coax is the (for illustration I'll take the downstream) frequency range divided by the 8 MHz bandwidth (what is it now 200 meg to 1 Gig which gives 100 theoretical channels?).

To answer Kushan's point about fibre at the green cabinet - in my area 5 or so launch cabinets aggregate over coax at an optical node and maybe 20 or so green cabinets go to a launch cabinet.
