Dunno where WinFS has gone. I think one day they will release the replacement they've been threatening for NTFS, but obviously not yet. Until then, they'll keep on tweaking NTFS.
As for Apple, for a long time, they've had a slightly screwy version numbering system. They've been essentially doing "point" releases of OSX (with is actually OS10) since 2001.
Still, you are right, naming OS releases after wild cats, birds, or desserts (to bring another Linux based OS, Android, into it) is far more interesting than version numbers.
