As it would be good to make use of them, we have a 21" flat screen TV doing nothing, and it would be great if I got it working as I could put it in the kitchen
It won't be true freesat but the card you were supplied with should still work for the free channels (upto when they issue new cards), so make sure that it's connected to the dish and just plug into the TV..
