We're having chicken on Saturday nash. Daughter is coming down from London for the weekend and I have to cook her favourite meal, again. Bone in, skin on chicken breasts from the farm shop. A couple or three quartered red onions, olive oil, a sprinkle of Aromat and Schwartz black and red pepper. Roast for 30 - 40minutes @ 200c (fan 180c). 10 minutes before the end add a handful of cherry tomatoes. Leave to rest for 10 minutes covered with foil whilst you make the couscous up. Chicken or vegetable stock cube dissolved in 300 ml of boiling water for 300g of couscous. Cover with cling film and leave for 5 or 6 minutes. Fluff up with a fork. Easiest dinner I've ever cooked and really good

. Forgot to mention that a squeeze of lemon juice works will on the chicken as you plate up.
