In my experience of using the SA version of the box is that you would/could have the TV scart socket into the TV and the VCR scart into the DVD recorder. I don't have an LCD tv so I don't know if that affects the output but if I remember correctly, as soon as you switch to HDMI the scart is disabled? Maybe it only disables the TV scart and not the VCR scart?
So your problem is maybe two-fold in that you have the HDMI enabled and also connected the wrong scart.

Also must point out that you will not see the menus or anything via the VCR output, just the output picture. For example, many occasions I record from red button and then I think the remote is duff when I press back or menu then realise that I'm on the VCR scart and not TV scart! lol

The way I do it is to select 4 one hour episodes e.g. The Wire. Queue them up to play one after another via the TV scart using the "copy" facility in the Virgin menu and press record on the appropriate AV channel on the DVD recorder. Once you start the copy process, the queued progs will play via the VCR scart but enable you to use the TV scart to watch normal tv.
I then get all 4 episodes recorded one after another and then get rid of the trailers etc and chapterise and burn to DVD disk.
Again, hopefully someone can say whether the VCR scart is still usable in HDMI mode as I don't know.
