actually the Femoral Artery is the worst injury that butchers can get. When boning out beef chucks for example you could slip off the bone and stab yourself in your upper thigh and if you do get the Femoral artery it can be game over. Also you could injure yourself badly with a chopper lol
You have to look after the meat right as well as botulism is a killer also so there is possible risk to customers
