When I recently was messing with changing DNS and mail server stuff I too found that ntl based DNS took a looooooong while to update. If your last webhosting name server settings had a long TTL setting (Time to Live) that might be a factor and you'd have to wait for that to update. I think the web standards normally say allow up to 48 hours for all changes, but most DNS will refresh much quicker than that, hence most people sending to your new email addy.
Would your old email server location still be capable of receiving emails sent to it's old DNS? If so that would explain your lack of bounce back errors.
