It would be hard to tell it which one to record from unless it had 2 scart inputs which were selectable. Or you could wire in a scart switch and use the monitor output (no I don;t mean a TV/PC monitor)
Freeview PVR's though do not generally enable you to record from the scart socket, so you'll need a seperate PVR
It also then depends if the TV allows you to output the freeview on a scart plug whilst watching another scart as you have built in freeview
