I would agree with what Uncle Peter said above. 3 mailboxes 1 for each domain and set the primary smtp address for the account to what you need is the easiest method.
Before creating the 3 accounts / mailboxes though you need to make sure that you have the @domain1.com etc smtp addresses added to the default policy template for the recipients policy in the exchange organisation. If you do not do this outbound mail will be tagged as username@<domainname>.local or whatever you called your internal domain.
Also be aware that some ISP's will not relay mail for domains that they do not hold the MX record for, if your domains are not registered with your ISP for mail exchange then you need to make sure that the SMTP virtual server service is pointing to the correct mail exchanger or smart host for your domains.
