As I say, I don't know a great deal about this - my understanding is that everything has to be done through i-tunes, hence the behaviour you are seeing.
The volume thing is due, afaik, to EEC legislation restricting the maximum volume of portable music players & is set in the firmware.
It used to be possible to find alternative firmware, or a software patch to increase the 'default' volume, but someone who knows a bit more about it may be able to confirm if it is still possible??
