There's very little difference in how an animal is slaughtered under Jewish or Islamic laws. Infact Kosher meat is permissable to eat for Muslims as its slaughtered in virtually the same way. Kosher meat slaughter is a bit stricter than Halal, as, if I recall correctly, there has to be a Rabbii in attendance.
