At our clan's Lan parties we've successfully daisy chained switches and hubs off a single router to establish a network for some 20 PCs. Thus the router provides the DHCP settings for everything. In my case the router was a simple Linksys WRT54G. I'm sure we've used a Netgear router elsewhere too. Indeed most routers should be capable.
We could have used just the one switch with loads of ports, but the many switches reduced the number of long ethernet cables you needed. Most switches are now sufficiently intelligent that you don't even need to tell them which one is an uplink to the next switch / router - they do that themselves.
