They subjects aren't made by man, but IMO the photographs are art due to the composition / colour balance & everything else which is down to the skill of the photographer...

Good point! OK, let's stick with the subject (as opposed to a photograph) for a moment. Suppose you climb a mountain, and near the top gaze upon the snow-capped peak. This is completely untouched by man, as it snowed last night, and you are the first person on the scene. Would you call this art?
