To answer my own question you can use following syntax in the shortcut:
"[Firefox directory]\firefox.exe" -profile "[profile directory]"
e.g.
Code:
"C:\Program Files\Mozilla Firefox\firefox.exe" -profile "C:\Documents and Settings\[NAME]\Application Data\Mozilla\Firefox\Profiles\[profilename]"
