I've set the refresh rate overrides in the Nvidia control panel for this resolution to 75Hz but that doesn`t guarantee that the mode will run in that refresh rate.

Does anyone have any ideas as to what I can else I can possibly tweak to ensure that I always get my desired refresh rate.

How do you mean "give the system a nudge" exactly?
