Gold HD has replaced Gold on channel 124, but many of the shows are appearing in square format. Any way to change back to the non HD version of the channel?

Not on Virgin Media, you can't.

Old 4:3 content is shown on HD channels with sidebars to maintain the correct aspect ratio without losing any of the picture. But if you really want it to be stretched or zoomed to fill the TV screen, your TV probably has a setting to do it.

The programme is being broadcast in widescreen the black bars are part of the picture.
The TV settings won't be able to stretch the picture as it think that it is already filling the screen.

All HD channels process the picture to carry 4:3 pillarboxed at the sides so the transmission remains 16:9 format. It cannot be stretched because there is nothing to stretch.

The only alternataive is to use Gold +1 which is still in SD.

Many TVs have a setting to do this regardless. Some can even detect the black areas and remove them automatically. Not that I'd recommend it!

Not true, most TVs as part of the picture options will have an auto mode to try and display the correct setting. However in this case you would need to choose 16:9 from the picture menu to force a 'widescreen' view.
