Looking forward to getting to know all you guys :)
Anyway, It was my mum who had the services with Sky and tonight I've booked VM phone and 30mb broadband.

Phone wise, my mum will be cancelling sky talk tomorrow ; how will this affect my VM installation which is on Wednesday if Sky Talk is still on the line?

Nope. VM use different cables to Sky mate.

So the phone line can still be installed then? Will I also be able to use the existing sockets or will a new one need to be fitted?

VM will pull 2 cables if you haven't got them already. 1 will be for your landline and the other will be for TV and Broadband. The phone socket(s) will be different to Skys.

The difference will be huge! 2.8mb is slow even by DSL standards lol.

If you get Virgin to install their new telephone linebox next to your main BT/Sky linebox it's then just a case of connecting your extension wiring to the new virgin socket, the engineer may even do it for you.
