MediaCoder.

Really annoying interface and buggy as hell but it converts just about anything once you find the right settings.

Have a look at some forums online, a number of people have posted on this in XBox forums especially because they want to watch dodgy movies downloaded in .mkv containers on their XBox which requires .avi, .mp4 or .wmv giving a few options. I believe DivX have a development solution which will transcode .mkv to Windows Media Centre in real time if that's what you're looking to do.

In fact a quick Google... http://labs.divx.com/node/14831

is there a reason you want to turn an MKV into an AVI? MKV is just a container for video files. If you need to change it to get the file to play in a stand alone device then simply try MKV2VOB which basically removes the container leaving a Mpeg file of the same quality as the original. If its a space issue then ignore me :)

You can easily 'unwrap' MKV with MKVMerge. Providing the files that have been muxed to MKV are an avi with either an mp3 or ac3 audio track you will be good to go. In case the video and audio are separate simply remux them in VDM (virtualdubmod).

MKVMerge is part of MKVToolnix.

All software mentioned is free. :)
