Roast pheasant, roasted new potatoes, veg etc.

Shame the shooting season has been hit so badly. Can't get much more distant than shooting as long as you don't include drinkies. And like other "food" production you can't just park it until later.

Got a nice Sika rump roast from the farmer's market. Seared in pan then roasted (rare) served with port and redcurrant sauce, mash and fresh veg. Costco profiteroles for pud.

Thanks to the outer glass on our 16 year old oven being broken and the insurers not wanting to repair it (I can get the bits even if they can't) I needed to do things differently for the Sunday roast.


So spatch-cocked the chicken, seasoned and grilled it (same as BBQ but heat from above not below). Rice and some Mexican sides from previous night's chilli and nachos.

Local Mediterranean Bistro had a stall selling takeaway Turkish food, so having a Turkish version of Spanakopita (spinach & feta pie) followed by coffee, baklava, and pomegranate & pistachio nougat.

We had friends in the garden on Saturday, thanking God for the lovely weather, even Tshirts OK.
Leg of Lamb with 40 chillies - uses dried Kashmiri's so not really that hot, 30 were deseeded.

Bean, pea, carrot curry
Sweet corn curry - very good
Rice
Chappaties
Lots of pickles/chutneys - the chilli pickle was nasty
Followed by lemon cheesecake provided by guests


Sunday we had a turkey thigh in maple syrup and mustard with mash, peas, carrots and corn on the cob.

Yesterday I cooked a pork joint I bought just before she came home, and it's been in the freezer.


I salted the rind and dried several times before putting in the oven, the crackling was the best I have ever done.


Trouble is it means well will need to eat if the next few days.


In future I'll get one and cut it down to smaller portions.

Slice it up as usual and wrap each slice in cling film. Then bag up and put it in the freezer. Then you can get as many slices out as you need at future dates.

You can also freeze the crackling. Again portion up and individually wrap. To use that defrost and then pop it in with the roast potatoes for about 10 minutes to crisp up.

SWMBO & daughter out at Leeds Grand, watching "Six", the musical about Henry VIII’s wives.

So, some me time - a 400g Aberdeen Angus Ribeye, aged 28 days, with thick-cut steak chips, mushrooms (griddled in the steak juices), & peppercorn sauce, washed down by my Fathers Day present from my daughter, a bottle of McGuigan "The Shortlist" Barossa Valley Shiraz 2018, whilst watching Loki episode 4.

On Saturday we had guests so did a Mediterranean meal. On the braai I roasted some lamb shoulder on top of spicy white beans, then haloumi, Portuguese sausages, flat breads, village salad (nice ewe/goat milk feta on the side), lots of olives etc.

I thought it was monkfish tail that they were passing off?

With the requirement to list ingredients on products I don't think this happens in the supermarkets but who knows what goes on in the kitchens of pubs and restaraunts?

We had guests at weekend so served
Beef short ribs - rub on for 2 days prior to smoking for 4 hours on BBQ adding Korean BBQ sauce for last hour. (I must remember to carve these rather than giving single ribs - too big)
Sticky rice
Pineapple curry
Thai vegetable yellow curry
Followed by
Chilli chocolate pots


I get the ribs at Costco because too many supermarkets don't sell as a rack.

Monkfish is far more expensive. It would be like trying to pass-off venison as beef.

Polish sausage and flageolet beans for us today. And it's the last of the flageolet beans as no-one seems to stock them any more. :(

It is now it's trendy but it used to be very cheap, rather like lamb shanks are so pricy. There was a time when the butchers couldn't sell them and virtually gave them away.

They've disappeared from Sainsbury's as well. I have a nice recipe for tuna and bean salad but I have to substitute the beans with another type.

I buy beans from Asian supermarket where I can get a 600g jar of white beans that is 85 bean not water for 69p. They have lots of other sorts of bean so is it worth checking if you have access?

I was a butcher back in the 80s and the spare ribs we used to sell then were just the waste off the shoulder next to the much tastier spare rib chop. Now you see butchers (well supermarket meat providers anyway) cutting the rib off the belly draft and then selling them as spare rib basically ruining the belly draft in the process. Meat is much better cooked on the bone where possible.

Best cut of beef is the chine rib cooked on the bone but now they ruin that by cutting the eye out of it and steaking that

Did a BBQ party yesterday for members of a bible study group my wife helps with. 2 members have birthdays coming up and requested a barbie.


Pork works well. Interesting that shoulder is cheaper than belly now and that is cheaper than ribs. (Side note - disappointed that Costco didn't have racks of beef short ribs, just all separated individual ribs). So did a 2.5kg shoulder with garlic, lemon juice, olive oil, salt, pepper and oregano marinade on the braai with apple wood smoke. I went for a nap so son applied more marinade with rosemary brush. Also did 2kg of Italian sausage (just garlic and salt seasoning - 97% meat) in rolls.


I made a chilli sauce, we also did village salad with feta on the side, halloumi, flat breads.


So nice to be able to cook for a group of people again.

Last night: venison rump roast (season salt/pepper, seared in pan then cooked in oven, slightly pink - like lamb), home grown veg (potatoes and carrots from our garden, beans from neighbour). Since our son was away instead of carving in thin slices I too off end and cut a couple of nice "steaks" for wife and myself.

Home made beef rendang. OK it's a spice paste but the rest is home done. Beef cooked for 4 hours. Superbly tender.

I've never done this before as I was somewhat wary of the coconut milk but there's no obvious coconut flavour in the final dish.

Really nice. :)

One of my favourites, and actually pretty easy from scratch. Red pepper, red onions, garlic, ginger, turmeric, ground coriander, cloves, dried chillies - blitz all of those. Fry in oil, then add the beef, then add coconut milk, salt & bashed-up lemon grass. Cook for as long as you want. Even better reheated the next day.

Tuna and bean salad. Normally this is made with flageolate beans but these seem to be in short supply at the moment so I've substituted cannelloni beans.
