Re: The Happy Thought Thread Part 4

Just been making the filling for a batch of individual fish pies in size 2 ceramic dishes. 2 for tonight and 4 to put in the freezer. Used smoked cod, pollock and salmon. I'd been accumulating the fish in the freezer as and when I found it reduced. I'll top the pies with potato and parsnip mash.

I freeze these in their dishes wrapped in cling film then they're ready to defrost and cook without further work.

Driving round Cape Cod/Massachusetts for the last four days, and yesterday we decided to visit Old Sturbridge Village in East Mass.

So we rocked up to a hotel, where the Internet rack rate was $200 per night per room, but Booking.com had it for $150.

We went into reception and asked for their best rate, and they quoted $115 - so far so good.

The heating in the room wasn't working, so they sent someone to fix it (unsuccessfully).

When we checked out this morning, we pointed this out, and they reduced the rate by $50 to $65 per night per room, and threw in 2 entry tickets to Old Sturbridge Village free of charge (normal cost $48 for 2), so our room ended up costing us $17 - result!

Just had a meal with my wife and our best friends at the River Cafe, Brooklyn - outstanding food, amazing service, and views to die for; watching the sun set over Manhattan, with One World Trade Centre in the middle of your sight line, and the Statue of Liberty to the left and the Empire State Building to your right, was one of life's great experiences.

Started the day off at the 9/11 Memorial Museum, and then went up to the 102nd floor of One World Trade Center to the One Observatory - the views are amazing.

All in all, a great holiday, an outstanding last day, but looking forward to flying home tomorrow evening.

The old man's looking a lot better today. He'll be in hospital for a while yet I'm sure but at least he's got a bit of an appetite and can now have stuff like soup and yoghurt. He chatted quite a bit and even told me he wants to get up and have a walk which is a good sign even if he's not quite ready for that yet due to the problem he has. When I saw him on Wednesday he looked so tired and old I was quite worried but today I'm feeling more positive. Fingers crossed.

Thinking of you and your Dad Osem. If he can keep positive I truly believe things can improve.

Thanks Weenie. :hugs:

Saw my mum today and she seems to be making more of an effort now too (not difficult), getting out of bed and even walking using her frame. Maybe the silver lining to this cloud will be that she realises she can do a whole lot more than she has been used to doing for the last few years.
